Briefing
Bahama Mamas is taking Tony's customers and Tony's answer is to send Luis to dance with the owner's girlfriend and then shoot the owner. The mission is a nightclub sequence with a rhythm game in the middle of it and a firefight on the other side.
The killing turns out to be optional. Luis can walk out of the club without doing it and neither the dialogue afterwards nor the news coverage notices the difference, which is a strange and rather good piece of writing to find in a mission about a dance floor.

Walkthrough
Get onto the floor
Tony goes to Bahama Mamas and Luis works his way to the dance floor and to Monique. The scoring asks for the dance itself to be performed without mistakes, so this is the section to concentrate on rather than skate through.
The owner, and only the owner
The shooting happens in a crowded room and the condition attached to it is about who is not hit: neither Monique nor any of the civilians on the floor. That makes a careful single target better than volume of fire.
Or do not shoot at all
The owner does not have to die. Leaving the club instead completes the mission, and nothing later in the episode changes either way.
Clear the area
Getting out of the building and away from it ends the mission, inside three minutes ten for the clock.
